Tasting Notes:

We taste through each barrel in the cellar and then - by a very complex ancient algorithm - we create a code in binary notation, not too much, not too little and so we blend the FMC. This singular, unique barrel with incredible character refused to be defined and blended and so it was simply bottled directly from the barrel with no intervention, no codes and no algorithm. Just a delicious, unique intensity.

Hand selected Chenin Blanc – primarily from low yielding, old bush vines (planted in 1974).  Harvested at full maturity.  

Maturation on the lees – total of 12 months in the barrel.

Food pairing

Enjoy with special friends as an exciting aperitif or with spiced dishes, even mild seafood, shellfish or curries. Superb with exotic Eastern spiced foods.
